It's been a busy week and a dead quiet week-end! I think this must have been the quietest Christmas we have ever had! We woke up on Christmas morning, I made some coffee, some mince pies and shortbread - we sat and looked at each and said "Merry Christmas!" LOL! P was Santa and handed out our gifts! It was quite funny! We were very spoilt and after packing our gifts away, P went for a swim (it was BOILING hot) and I went to prepare my contribution for lunch to the Taranto's! I made a Strawberry and Rocket salad, A frozen Christmas Bombe dessert and brussels sprouts with kassler and waterchestnuts! The Strawberry and Rocket Salad was such a hit, I thought I would share the recipe with you!


2 punnets of strawberries, halved and placed into your serving bowl
marinade the strawberries in balsamic, lemon juice and olive oil
(Just enough to cover, equal quantities)
Ground black pepper sprinkled over the top
I leave it to stand overnight.
Just before you're ready to serve, add fresh baby rocket to fill bowl.
Garnish with grilled halloumi and crispy bacon bits!
YUM!
We had a lovely day with lots of laughs and good fellowship!
I can't believe that another Christmas is over. Soon it will be New Year - I wonder what that will bring! For South Africans, it will mean lots of hard work as we get things finalised for the World Cup! This year I hope to be more organised and not leave things to the last minute! :)

Happy Christmas to you Janet - I remember HOT christmas days when we lived in Ghana!!! we've had snow this year but by Christmas day where we live it had cleared up. Glad you had a lovelyu Christmas and 'cheers' to you and your family 2010 - lots of love Judyx

Salad sounds yum! .. eager to taste it if J makes it for New Year!! I agree with your last statement .. be more organised next time! Gosh, Christmas caught me this year ... all this rushing around at the last minute was too hectic!!!

Time is passing fast. The days have begun to be longer here. I do love the birds we have come to the feeder this time of year.
I'm glad your Christmas was quiet. We spent ours with extended family. New Years eve and day will be quiet.
