6 Chourica Sausages, casings removed
3 Green Peppers, cut in slices
2 onions roughly chopped
1 small can of tomato paste
1 cup red wine
hand full of pitted black olives (more if you like)
roughly chopped FRESH garlic - nice big pieces!
- Gently fry up the chourica until warmed through.
- Add the onions and green peppers and fry until soft
- Add can of tomato paste and red wine and simmer gently until chourica is soft
- Add olives and garlic and leave to cook slowly for at least an hour, stirring occasionally. Must be nice and chunky!
Serve with fresh Portuguese bread, a nice green salad and a good bottle of red wine! Finish off with some Portuguese Custard Tarts pretending that you're on the Portuguese coast and that work tomorrow is a mere figment of your imagination!
