Chourica Ala Tenjana!

We have been invited to friends for supper tonight and I have offered to make my famous Portuguese Chourica dish, served simply with a green salad and FRESH portugues bread!  Oh no!  This isn't turning into a recipe blog, but I have had so many people ask for this recipe, I thought now was as good a time as any to share it.  Remember, I like recipes that you just "put" in the ingredients, as much as you like!  So use these quantities as a guide line, you can add or take away whatever you think there is too much / too little of! :)

6 Chourica Sausages, casings removed
3 Green Peppers, cut in slices
2 onions roughly chopped
1 small can of tomato paste
1 cup red wine
hand full of pitted black olives (more if you like)
roughly chopped FRESH garlic - nice big pieces!

  1. Gently fry up the chourica until warmed through.
  2. Add the onions and green peppers and fry until soft
  3. Add can of tomato paste and red wine and simmer gently until chourica is soft
  4. Add olives and garlic and leave to cook slowly for at least an hour, stirring occasionally.  Must be nice and chunky!
Serve with fresh Portuguese bread, a nice green salad and a good bottle of red wine!  Finish off with some Portuguese Custard Tarts pretending that you're on the Portuguese coast and that work tomorrow is a mere figment of your imagination!
