A day at the Races!

I have just returned from a wonderful week in Assegay!  So many laughs, so much fun and plenty of racing!  I thought I would share some of my happy memories of a day at the races!

The finish line at Scottsville Race Course in Pietermaritzburg

Time to saddle up ...

Walking in the ring ...

Instructions to the jockey MJ ... (Colin the trainer left, Rob the owner right!)

Ready to go to the starting pens ...

... and celebrations afterwards!

Happy smiles and lots of laughs - Graham who I'm banking on to ride in my colours ... one day!

Can't remember what story Rob was telling here, but Michael found it funny and Les was really interested!

We had such a good time, now I'm looking forward to the Gold Cup at Greyville in two weeks time!

We enjoy watching the triple crown races here on television but have never gone to an actual race. We have been to lots of horse shows though.

You asked about the soup. I could give you a recipe but I only roughly follow it. I had about 15 quarts in the pot all together. I own a pressure canner but you can use a hot water bath, too. I pour boiling water into the canning jars prior to filling and then pour that out, the jars are then hot, I have the lids and rings in boiling water and of course the soup is hot, too. My canner holds 7 quarts and I pressured it for 25 minutes using 10 pounds of pressure. If you own a small pressure cooker, its the same principal. This will seal the jars and they will keep for years as long as the seal holds. Everything was cooked prior to canning so we can just open a jar, heat and eat.
Thanks for your interest.
