Mashed Potatoes!

Mashed potatoes is a favourite in our house.  I always struggled to get them creamy and fluffy, without little bits!  I have it down to a fine art now!

I cut my potatoes into little squares, and boil them in salted water until they're soft.  Then I mash them with some smooth cottage cheese and a little butter with salt and pepper.  I put them into an oven-proof dish, covered, at 160 degrees C and let them bake for about 20 minutes.  I take them out and mash them again ....

.... perfectly, soft and creamy mash!  Much nicer than the instant variety!

How do you make YOUR mashed potatoes?

Real mash is much better than the instant stuff.

Is it bad to say that mashed potatoes are my least favourite kind?!
