Mashed potatoes is a favourite in our house. I always struggled to get them creamy and fluffy, without little bits! I have it down to a fine art now!
I cut my potatoes into little squares, and boil them in salted water until they're soft. Then I mash them with some smooth cottage cheese and a little butter with salt and pepper. I put them into an oven-proof dish, covered, at 160 degrees C and let them bake for about 20 minutes. I take them out and mash them again ....
.... perfectly, soft and creamy mash! Much nicer than the instant variety!
